Milk is a beverage that contains essential nutrients for health, in addition to being a versatile ingredient with which to prepare dishes, drinks, sweets and other products, both food as personal care.

In Mexico, the main producing states are Jalisco, Coahuila, Durango, Chihuahua and Guanajuato, with a volume estimated at six thousand 510 million litres, representing more than half of the total milk produced in the country.

According to the Secretariat of Agriculture, Livestock, Rural Development, Fisheries and Food (SAGARPA), the first quarter of 2017, the milk production of cattle amounted to two thousand 758 million litres. The year, Mexico recorded an annual production of more than 11 thousand 300 million litres of milk, with an average consumption per person of 95 liters.

The benefits of this food are recognized around the world, since 2001, the United Nations Organization for Food and Agriculture (FAO, for its acronym in English), established the first of June as the world Day of milk, with the goal of promoting consumption, and to celebrate its nutritional properties.

From the point of view of diet, milk is the pure food closer to perfection; its main protein, casein, contains essential amino acids, besides that it is a source of calcium, phosphorus and riboflavin (vitamin B12), which contribute significantly to the requirements of vitamin A and vitamin B1 (thiamine) of any person.

This food can be found in different forms: powdered, condensed, evaporated, lactose-free, low-fat, low-fat, and of course, as a whole. Of this last presentation, Jalisco is the national leader with more than 2 billion litres a year.

This drink is consumed cold, warm or hot, it is usually served alone or with chocolate, the combination is infinite, is the classic banana smoothie, strawberry, mamey fruit or cereals, to refreshing smoothies, recipe in addition of the fruit including yogurt, ice, sugar, and cinnamon.

In the kitchen, milk is an essential ingredient for the preparation of desserts such as puddings, popsicles, ice cream, jellies, custard, cakes, bread, rice with milk and gruels; it also plays an important role in dishes savoury as creams, pastes and sauces, as well as artisanal products, among them cheese, yogurt and cream.
