Dessert peaches-pears

Because it is not only the patisseries-orientales, here is the cake made for the birthday of Elias, that I will often decline during this month of Ramadan. When it is hot and heavy, I prefer to indeed finish the meal with a good dessert fresh rather than cakes full of honey.

The recipe is simple, I am very inspired by all the desserts that Hanane offers on his blog to make my “sauce”, which like the king of the day !

For the cookie, you need to :
– 90 g of flour
– 20 g of powder of almonds
– 4 eggs
– 100 g of sugar

For the mousse of pears (in syrup) :
– 200 g of pears in syrup, pureed
– 20 cl of whipping cream
– 60 g of sugar
– 6 g of gelatin
– Syrup of pears

For the foam of fisheries :
– 200 g peaches in syrup mixed
– 2 half pears in syrup, cut into small pieces
– 20 cl of whipping cream
– 50 g of sugar
– 4.5 g of gelatin
– Syrup of fisheries

For the mirror to the fishing :
– 2, mumps, peaches in syrup
– 5 cl of syrup
– 3 g of gelatin

Prepare the biscuit : preheat the oven to 180°C. Beat the egg whites with the sugar then incorporate the egg yolks. Add the flour and almond powder and mix gently.
Pour the mixture onto a baking mat (baking mat with edges that allow you to have a cookie of the same thickness throughout) and cook for 10 to 12 minutes.
Allow to cool before unmould and cut into 2 rectangles of size identical to the size of the frame that will be used for the dessert. Have a rectangle at the bottom of the frame and soak it with a little syrup of pears.

Prepare the foam of pear : rammolir the gelatine in the cold water. Mount the cream whipped with the sugar. Add the pears mixed into mashed potatoes and mix gently.
Squeeze out the gelatine and melt it a few seconds in the microwave. Add in the preparation, mix gently and then pour the mouse on the biscuit, spread to have the same height everywhere, add the small pieces of pear and put in the fridge for 30 minutes.

Have the 2nd rectangle of biscuit on the foam of pears. Impregnate slightly syrup from peaches. Soften the gelatine in the cold water.
Mount the cream whipped with the sugar, add the peaches mixed. Squeeze out the gelatine, melt it a few seconds in the microwave and add it gently to the preparation. Pour this mousse on the 2nd rectangle of biscuit and put in the fridge for 30 minutes.

Prepare the mirror to the fishing : make soften the gelatine in the cold water. Mix the mumps of peaches with half of the syrup. Squeeze out the gelatine and melt it a few seconds in the oven, micr-waves with the rest of the syrup. Mix the peaches and the jelly and spread this mirror on all the surface of the dessert.

Store in a cool place for 5 to 6 hours.

For the birthday of Elias, we have just decorated this cake in small letters in sugar and a little train that carries the 2 candle.
