Easy entry and festive : cream of cauliflower so Dubarry caviar

It seems that 59% of French people have never eaten caviar, that 28% of 18-24 year olds who have never tasted are curious to enjoy a day. A little less than half of the inhabitants of the paris region has already tasted the caviar, compared to 39% in the province. And it seems also that 45% of people who have never bought caviar do not imagine buy.

It is no doubt because for many, the caviar may be a luxury product, sold in delis where the sellers we talk to the head at the foot of aun air dismissively eager to tell us that they do not sell baguettes … But it’s all an urban legend as it is now the caviar in large areas, in our supermarkets, where more than 80% of the Christmas sales are.

Many also think that the caviar is much too expensive, between 50€ and 78€ for the small box for 2 people. But all of that was before Labeyrie only democratizes the consumption of caviar. You all know Labeyrie, this mark that we find in our supermarkets for smoked fish or foie gras for example. Well now, you can also find their caviar at a price defying any competition in our supermarkets ! The caviar Labeyrie exist in 4 versions :

Caviar Royal Labeyrie – Species : Acipenser baeri – Origin : Uruguay
A delicious caviar initiation. This caviar has a fine and even texture, of a gray color intense. It develops a flavor that is generous, melting texture, with subtle hints of seafood. Appreciated by all, and to serve on its own or on blinis with sour cream.

The Osetra caviar Labeyrie – Species : Acipenser gueldenstaedti – Origin : Israel
The inescapable reference of the best caviars. The Osetra caviar is the favorite of women, perhaps thanks to its grain, regular, of good size, of a dark amber colour to golden brown. Its taste is characterized by a mild flavor and balanced. It is appreciated for its length in mouth and its marine flavour.

The caviar Imperial Labeyrie – Species : Daurichus shrenkii – Origin : China
The grand cru of caviar. The caviar Schrenkii is characterized by a grain of good size, firm and a color gold brown unique. His scent of the sea lingers in the mouth reveals pleasant notes of dried fruit.

The caviar of Aquitaine, Labeyrie Species : Acipenser baeri – Origin : France
Selected by Labeyrie, caviar, grain-based and regular gray color intense offers a taste subtly iodized.

I had the occasin to test one of the products in this range and I took the opportunity to test a small recipe festive (but easy) that I propose here.

For this recipe for 6 people you need :

  • 1 beautiful cauliflower
  • 2 potatoes
  • 1/4 of a litre of milk
  • salt, pepper
  • Caviar Labeyrie
  • Whipping cream (optional)

Clean the cauliflower and cut the commités. Epplucher and cut the potatoes into cubes. Put the potatoes and cauliflower cooked in a large volume of salt water, jsqu’that they are tender.

Put the cauliflower and potatoes in a blender, with 1 to 2 ladles of the cooking liquid and the milk and mix very finely. Correct the seasoning with salt and pepper and keep warm.

For a true festive dish, make a chantilly salt with the whipping cream and when it is mounted, add a little of the caviar and toss gently.
Pour the cream soup into small bowls or glasses, add a quenelle of whipped cream to caviar (if we took this option) or a small spoon of caviar on top and serve immediately.
