Easy recipe for pork chops in the oven
This myth that pork is bad is not true. As I said before, my dad, who was a Physician Veterinarian Zootechnician, chairman of the association and also medical researcher, we always said that pork was a lot healthier than beef and even more than the chicken, is always full of hormones and drugs, and eventually we eat. That said I would like to share this recipe for pork chops that is a delight, is prepared with a simple two-step method in a cast iron skillet and then in the oven. What to enjoy!
- 2 pork chops, 5 cm thick, with bone, left at room temperature for 1 hour
- Coarse salt
- Freshly ground black pepper
- 3 tablespoons canola oil
- 220grs of bacon, cut into small dice
- 1 tablespoon fresh thyme, finely chopped
- 1/2 tablespoon of fresh rosemary finely chopped
- 2 cloves of garlic, chopped
MODE OF PREPARATION
Heat the oven to 200ºC and place a rack in the middle part of the oven. Cover generously the pork chops with salt and pepper on all sides.
Heat the oil in a cast-iron skillet over high heat. When the oil is hot, add the pork chops to the pan. Let fry until well browned by all of the bottom edges, about three minutes. To fry the edges well and the bone using tweezers.
Put in the oven in the skillet to finish cooking. Cook until the internal temperature of the chops reaches 60 ° C in the thickest part, about 5 to 8 minutes, depending on your oven and the thickness of the chops. Should be medium term, of a pink color slightly in the middle. Remove the pan from the oven, cover loosely chops with foil, and leave to one side to rest for about 10 minutes before serving.
Meanwhile, place a large skillet over high heat. Add the pancetta and the herbs. Reduce the heat to low and continue cooking the pancetta, stirring continuously to break up the big clumps and until all the fat is processed (reduced) and the bacon crispy. Add the garlic and cook until fragrant, about a minute. Season with black pepper (do not add salt as the bacon already has its own). Leave to one side.
Place the pork chops in a dish and add a tablespoon of the mixture of bacon on the top. Accompany with a fresh green salad.
