Prescription. Salad of Noodles with Cucumber and Marinated Ponzu
When you say “Noodles” in any conversation that has to do with the food that I’m about to eat, something I heated it up in the sweet heart and I get happy. So it was obvious that I had to get a recipe to take advantage of the Ponzu Sauce Kikkoman that I apirañé in the supermarket. And then came the menu today: Salad of Noodes with Cucumber and Marinated Ponzu Sauce.
For this recipe with the Ponzu Sauce we need:
- 3/4 cup chopped cilantro
- 1/4 cup of mirin
- 1/4 cup rice vinegar
- 1 tbsp. brown sugar.
- 1 1/2 tsp. fish sauce
- A cucumber in slices of 3mm.
- Chopped red bell pepper. 1 piece
- 1 red chile, sliced thin.
- Onion. 1-piece girl in thin slices.
- Salt and pepper.
- A package of Noodles of Wheat (Soba)
- A cup of sauce Kikkoman Ponzu.
- 1 cda.de sugar.
- 1/4 cup of sesame oil.
- 2 tbsp. lemon juice.
- 2 tbsp. flakes of fish. These are found in japanese stores.
- Mint and Basil for garnish.
Yes… because that sound like lots of ingredients. But this recipe of Noodles with Ponzu Sauce and Cucumber has two steps. There I will.
Mix the cilantro, 1/4 cup of the mirin and the vinegar, brown sugar, fish sauce, cucumber, pepper, chile, onion, salt and pepper in a bowl. When it is mixed, reserve to one side.
Grab a large pot (about 6 quarts) and put salt in the boiling water. Cook the noodles al dente. This will take them about 4 minutes. Sneaks and putting them in ice water to stop the cooking and then place on paper napkins to dry. Grab two tbsp. rice vinegar, 1/2 cup of Ponzu sauce, sugar, and 1/2 cup of water and bring to the boil in a pan over high heat. Remove from the heat and leave to cool.
Sauté the noodles with this mixture, and the sesame oil and go to a bowl to serve and add to the mixture the cucumber that they had reserved. Put mirin, 1/2 cup of Ponzu that is, lemon juice in a pan and bring to a boil. Remove from the fire, add the flaked fish and let cool. Go to have only the Ponzu sauce with a touch of spice to add at the time of serving their noodles. Decorate with mint and basil.
