I went on a trip to Oaxaca, and always I return to my home in the city of Mexico, within a few days, I begin craving all of the wonderful dishes that I enjoy every time I visit this exquisite destination of my country. A simple dish and very rich that I can do at home to take a little nostalgia. INGREDIENTS

  • 6 eggs, beaten with salt to taste
  • ½ Kilo of tomato roasted red
  • 6 fried garlic
  • 1 chile water roasted and peeled (If you are not can be used 3 green chillies)
  • 1 cup of water
  • 1 large branch of epazote
  • Oil or butter to taste
  • Salt to taste

MODE OF PREPARATION
In a pot or pan of shallow hot oil, makes an omelette with six eggs, on a gentle heat for that not brown. Should be a pale yellow colour. In the same container, without removing the eggs and adding a little more oil if necessary, put the tomato ground with the fried garlic and roasted chiles. Cook a little bit only, since all the ingredients of the sauce are well roasted; add water, salt and branch of epazote. Let it boil down to a flame.
