Recipe Salsa Macha de chile ancho with mezcal
This is a version of salsa borracha and other of macha, what makes it really different to this Salsa Macha de chile ancho is that I decided to use mezcal instead of tequila or beer, which is what the other versions. I love the mezcal, defend it with the heart, to the good, to respect the traditional processes, to which they pay well to the peasants, as I have already spoken of them in other articles and publications on social networks, and well, here goes this recipe that anger very well with carne asada tacos, barbecue, carnitas, or even a scrambled egg in the morning. - 5 chiles anchos secos
- 3 peppers of tree dry
- 3 chiles guajillos dried
- 2 tomatoes, gourd
- 2 medium garlic cloves, peeled
- 1/4 medium white onion
- 2 teaspoons of salt
- 1 tablespoon mezcal, or more to taste (optional)
MODE OF PREPARATION
Place a frying pan over medium-high heat and bring to toast the chiles, muévanlos often because it can burn and it is these oils, you will be ready when they are fragrant, no more than 3 minutes
Remove the chiles and set aside and now put the tomatoes and toasted evenly, until the skin burst then do the same with the garlic and onion, they are well golden brown. Leave to one side.
In that same pan put water to heat up and when it comes to a boil add the peppers and let them sit for at least five to ten minutes, remove the veins and seeds if you do not want to bite a lot, otherwise leave the veins, the seeds do not serve nor tails, also retírenlos.
They put everything in the blender, the peppers, the tomatoes, the onion, the garlic, add the salt and a cup of the water where the chiles, licúen well and add in the tablespoon of mezcal, to try if they crave more will be worth it. Serve and refrigerate for if you are not going to use immediately, or put it on the table and bon Appetit!
