Recipe Salad Mexican dressing with yogurt, cilantro and lemon

  • 1 piece of romaine lettuce, chopped
  • 2 marzorcas of corn (raw) destemmed
  • 4 mini (or 1 large) bell peppers, oranges, diced
  • 4 tomatoes guajes, diced (can also use red tomatoes cherry)
  • 1 cucumber, peeled and diced
  • 1/2 purple onion (medium, chopped
  • 2 avocados (ripe but still slightly firm), diced
  • 1 1/2 cup cooked black beans, drained

For the dressing

  • 1 cup Greek yogurt
  • 2 tablespoons of mayonnaise
  • 6 tablespoons milk
  • 1/2 cup cilantro, chopped very finely
  • 1 clove garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon of cumin
  • 2-3 pinches of cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons of fresh lemon juice


Add all the ingredients for the dressing for the salad in a glass bowl, mix and beat everything very well to combine and integrate it all very well (add more milk or lemon juice if you wish for a more liquid consistency and soft) Mix all the salad ingredients in a bowl. Add the dressing to salad and ready.
