The tagine of the day : chicken and vegetables

The tagine is a classic dish, cooked almost every day in Morocco. Necessarily, there are lots of varieties of tajine and beyond those to meat, fish or vegetarian, there are also tagines holidays (we cook to receive, for a special occasion, etc) and the tagines of the day. Here, everything is played on the presentation but also on the selected ingredients : the tajin festival will consist of fine pieces of meat, spices, honey or dried fruits while the tagine everyday will consist of pieces of meat more “classic” and simple vegetables from her garden or from the market, cut a little as you want. We spend a lot of time on the tagine feasts, then we cook almost mechanically to the tagine of daily life, the lady of the house throws it while doing something else, it does not require special attention.

But it is no less delicious, and at home, it is done regularly these tajines. The kids love them and don chipotent not to eat the vegetables that compose them.

For a tagine for 6 people :
– 6 chicken thighs (the bottom of the thighs only)
– 150 g of peas
– 4 carrots
– 6 potatoes
– 1 onion
– 1/2 bunch of cilantro
– 3 tbsp olive oil
– 1/2 CC of ras-el-hanout
– 1/2 tsp paprika
– 1/2 tsp ground cumin
– 1/2 CC of turmeric
– salt and pepper

Peel and chop the onion. Peel and cut the carrots into small pieces, the potatoes in the district.
Chop the coriander.

Clean the chicken pieces.

Heat the olive oil in the tajine. Add the chicken pieces, spices, salt, pepper and half of the chopped onion. Well fry everything for about 5 minutes. Then add the rest of onion, cilantro, and carrots on top, cover with water or chicken broth to min and let it cook for about 20 minutes.
Add the potatoes and cook for 15 more minutes. Add the peas and cook 15 more minutes (add water or broth if necessary) and salt and pepper on top.

Serve in the tagine.
